Simply, Sentient (Senziente).
Our journey begins with the “Senziente” from Merlot grapes, the first to be harvested.
Then follows the Cabernet Sauvignon and finally the Sangiovese.
Maceration of musts, their slow fermentation at a controlled temperature and frequent punching down, always done by hand, to allow each of the three wines to preserve the character and soul that sets him apart.
Separated, matured for twelve months in oak barrels, where the wine can breathe.
Then finally they meet, intertwine and give life to the “Senziente”.
And that still spends six months in oak barrels before being bottled and rest.
Refinement.
The result is a structured wine, powerful, with intense aromas of red-fleshed fruit jams, typical of Bordeaux, and the important shoulder Sangiovese tannin
which opens in suggestive aging scenarios, and then of liquirice and leather aromas.
